Il ne peut renier son élevage, et on profite du gras apporté par les lies fines. La note boisée est très agréable en finale. Densité de noisette, parfums de fruits blancs pour un très joli flacon. A marier avec des mets riches, boudin de chez Parra au piment d’Espelette, côte de cochon…
