AYAN EC was founded in the volcanic region of Santo Domingo de los Tsáchilas, Ecuador, with a bold vision to transform the way the world understands and experiences vanilla. Rooted in deep respect for nature, cultural heritage, and social equity, we have developed a model that integrates scientific precision, artisanal tradition, and sustainable innovation.
Our entire cultivation process takes place in over 5,000 square meters of high-tech greenhouse space, designed to maintain total environmental control. These conditions allow us to eliminate exposure to external contaminants and ensure consistent year-round production. Every plant in our greenhouse is part of a renewable and organic growing system based on living soils, natural microbial life, and nutrient protocols that avoid synthetic inputs. No pesticides, herbicides, or chemical fertilizers are ever used.
The cultivation process is led by expert agronomic engineers who manage each phase with scientific and ecological rigor. From nursery propagation to flowering induction, pollination, and harvest, every step is executed under close supervision. Each vanilla flower is hand-pollinated during the early morning hours, precisely at its moment of receptivity, to ensure optimal fruit formation and high yield.
After pollination, the vanilla pods remain on the vine for eight to nine months, reaching full physiological maturity. During this period, we monitor pod development through field evaluations, brix measurements, and growth tracking to ensure optimal levels of glucovanillin, the natural precursor to vanillin.
Once harvested, only flawless pods that meet our strict Type A quality standards are selected for processing. The curing process, which lasts between four and seven months depending on the final product category, follows a refined sequence of blanching, sun drying, fermentation, and maturation. Each stage is performed under carefully controlled conditions of temperature, humidity, and ventilation to promote the natural development of vanillin and the complex aromatic compounds that define our vanilla.
Our process includes rigorous laboratory analysis at critical control points. Vanillin concentration is measured to ensure the potency of flavor and aroma. Moisture and density tests are conducted to guarantee optimal texture, elasticity, and shelf life. All batches undergo microbiological safety checks to comply with international food-grade standards. In addition, cold extraction tests are performed to confirm solubility and aromatic persistence in culinary applications.
Every batch is also evaluated by a trained sensory analysis team that examines aroma layers, tactile finish, internal structure, and color consistency. This combination of scientific testing and artisanal sensory evaluation is what allows us to deliver a vanilla product of truly exceptional quality.
Our production model is fully traceable and vertically integrated. From seedling to final packaging, every stage is documented and managed in-house, ensuring integrity, transparency, and complete control over quality.
AYAN EC produces three distinct vanilla categories, each crafted to meet different professional needs but all falling under the highest Type A grade classification. Fine Root is our signature gourmet vanilla, perfectly suited for fine pastry, bean-to-bar chocolate, and culinary excellence. Golden Selection is a larger, richer pod with enhanced floral and fruit notes, designed for high-end gastronomy and fine perfumery. Masterpiece is our most exclusive offering, representing less than three percent of our harvest, selected for its size, purity, and complexity, destined for elite chefs and luxury creators.
